This delicious healthy breakfast was so quick and easy to make and looked so beautiful on the plate…. using Marjorie’s Seedling plums and cobnuts.
Just cut up a couple of ripe plums into a bowl, stir in a little runny honey and a heaped teaspoon of roughly chopped mint, give it a good stir. Spoon a large dollop of thick greek yoghurt onto a plate, cover with the plums, honey and mint mixture. Crack open some cobnuts and scatter over the top. Use Hazelnuts if you can’t get hold of cobnuts, the result is still fab!
Don’t just eat it at breakfast time as it makes a great pudding too and don’t leave out the mint thats what makes it really special! If plums are out of season ring the changes with chopped peaches, apricots, apples and pears. The fruity combinations are endless.
Cobnuts are a type of hazelnut and can be found fresh from early autumn.When they are young the flavour is similar to coconut, as they get older and darker they become much sweeter in taste.
